Hand crafted green tea cultivated on a very small scale. A true rarity as the annual production is so small. Even though technically a green tea, its taste is so delicate, it is very similar to white tea.
As with all high quality tea, you can brew the leaves again and enjoy each cup as new, exquisite flavours develop.

About This Blend
In the 1st Flush of spring, only the highest quality top 2 leaves and 1 bud of the plant are used for this tea. The leaves are delicately plucked early in the morning, within the first two weeks of the new season's growth. They are very gently steamed and dried, before being curled into the shape of a 'Monkey Paw'. The end result is an exquisite, handcrafted green tea.
Tasting Notes
A soft green tea that gives a clear, pale infusion with slight notes of honey. Even though this is technically a green tea, the resulting light-coloured brew and taste is so delicate that it almost resembles white tea.

Brewing Guide
1-2 teaspoons per cup. Brew up to 3 mins. It's important to use freshly boiled water cooled to a low temperature of 75-80°c. IMPORTANT: use freshly boiled water cooled for a few minutes to approx. 75 - 85°c.
As with all green tea, if the water is too hot or it's left to brew too long it will become bitter.
As you infuse watch how the leaves slowly uncurl. To enjoy at its best, this tea needs plenty of room to expand when infusing so make sure your infuser or pot is roomy enough. White Monkey can be re-brewed 2 to 3 times so you can enjoy the nuance of flavours that come with each infusion. Adjust both quantity and brew time according to desired strength. Drink without milk.
