About This Blend

There are several grades of Ti Kuan Yin (translates as Iron Goddess of Mercy!). This particular type is an extra special 1st grade. When comparing to other Ti Kuan Yin Oolong's, you will notice this one has a better leaf presentation which results in a more refined character and hence the additional label - Phoenix No.1

Balled oolongs are rolled between cloth into little pellets - watch these unfurl slowly when you add hot water.

Tasting Notes

Oolong tea is semi-oxidised which gives it a little bit more body than green tea (unoxidised) but less strength than black tea (fully oxidised), and interestingly the process gives the flavour a very unique twist. The leaves are lightly bruised to start oxidation. During this process the characteristic 'curly' leaf edge is created. After 15-25 minutes (depending upon ambient temperature and humidity levels) the tea is then fired to stop oxidation, locking in the special flavour profile.

Brewing Guide

This tea has to be brewed slightly differently to other teas. To get the best out of them closely follow the guide below:

1 teaspoon per cup. Briefly 'wash' in freshly boiled water, quickly pour off the liquor. Ideally leave the leaves in the pot to open for 2 minutes. after 2 mins add water at approx 80 - 85 degrees Celsius (by adding a splash of cold water to the kettle and leaving the lid off for a few mins you can roughly achieve the correct temperature.)

Leave to infuse 1-3 minutes. Can be re-infused several times until the flavour is exhausted. If you've left the leaves to open up after 'washing', the brewing times can be shorter and you will achieve more numerous infusions.

It's best to ensure your chosen teapot/infuser basket is large enough for the leaves to unfurl and the flavour to properly develop.

Drink without milk.
